In high anticipation of my trip to the Basque Country next summer, I'm starting to become accustomed to the region where many claim the best food in Spain, if not all of Europe, comes from. Cooked and prepared in generous amounts of olive oil, the food here is fruity, salty, and sour all at the same time. Every bite is surprising in a delightful way. Vegetarians beware, these dishes are predominately meat and seafood based. Aatxe on Market Street in San Francisco is the perfect place to catch up with a friend over many little bites. I recommend eating at the bar and coming at happy hour for the best deals and a fun atmospherical experience.
