In fact, they even receive daily shipments from the legendary Tokyo fish markets: Tsukiji and Ike-Jime. Tsubasa is committed to using fish that is wild caught or sustainably-raised (i.e. aquaculture).
You do not go here for mysterious deep fried rolls and sauces that mask the fish. Instead, stick to the classics: the chef's choice of nigiri (fish with rice) and sashimi (just raw fish).
