Vegan Grilled Cheese & Pear Sandwiches

I’ve only ever met one person who didn’t like grilled cheese, and that was my grandmother who had a strange aversion to it. I never understood that. But aside for her, this dish is certain to please everyone. 

There are so many new vegan cheese options on the market, that you can really explore with different flavors and textures. Personally I love cashew and coconut based cheeses, but soy cheeses are also quite popular. To make the ultimate vegan cheese sandwich, I pair the cheese with sliced pear to give it a bit of sweetness and crunch. You can use any type of bread, but I love this with thick slices of sourdough.

Ingredients:

  • Vegan cheese (1-2 slices per sandwich)

  • 1 pear, thinly sliced

  • Sourdough bread

  • Coconut oil

Method:

Assemble the sandwiches, add the cheese and sliced pear inside two slices of bread. Set aside.

Heat the coconut oil in a nonstick pan. Once the pan is evenly coated, add the sandwiches to the pan. Once the cheese starts to melt and the bottom half starts browning, carefully lift the sandwiches and add a little more coconut oil to the bottom of the pan. Flip over the sandwich so the other side gets a chance to turn golden brown.
